There is just something about the frigid cold of winter that makes me forget about the stickiness of summer. I spend the winter dreaming of summer. Then summer comes and I’m cranky and sticky and stuck to anything I sit on.
But I do have to say that overall I love summer. The days seem endless and people just seem happier overall. But I am definitely not running to my kitchen to turn on that hot stove. Some days I just can’t get myself to do it. Huge salads are perfect for those days.
But as delicious as this salad is, I know salads don’t seem that exciting to some people. So I wanted to do a roundup of some older recipes that are perfect for summer…

I have always been a fan of drinks that are also a snack. This Bloody Mary is just that with not only your traditional celery stick garnish, but also big hunks of beef jerky. What is not to love. I usually throw a few olives in too.
This light and flavorful fruit salad is perfect for a summer breakfast, brunch or even dessert! Serve it with some greek or coconut milk yogurt for some extra creaminess and tang!
Smoked BBQ Ribs w/out a Smoker!
These ribs can be made on the grill or in your oven. Whoever you serve them to will think you have a secret smoker stashed somewhere. Once you know how easy these are, you will be making them all the time!
Soft and Fluffy Blueberry and Lemon Cookies
Summer is the perfect time to break out fresh blueberry recipes! These cookies are so unique and have such a fresh flavor with the lemon zest. I have made these for several parties and people always go crazy over them.
A traditional ice cream float kicked up a couple of notches with homemade vanilla bean ice cream and topped with Guinness. A perfect adult summer dessert/cocktail! Just make some with root beer for the kids so they don’t go trying to get into yours!
Old Fashioned Waffles with Butterscotch Syrup
This is a breakfast for a leisurely morning. It feels like a vacation kind of breakfast! I don’t think you can find a waffle recipe that it more perfectly crisp on the outside and light and fluffy on the inside.
It is amazing how simple this ingredient list is. Pineapple, cinnamon and honey. But it creates one of the creamiest and delicious sorbets. An absolutely perfect summer dessert or snack.

OR if you are as hot and sticky as I am, throw together this salad. Simple, delicious, refreshing, and so healthy!
Chopped SuperFood Salad with Lemon Honey Mustard
For the Dressing
- Juice of 2 lemons
- 2 tbsp honey (or other sweetener of juice)
- 1/4 cup spicy mustard
- salt and pepper to taste
- Combine lemon juice, honey, and spicy mustard in a small bowl
- Whisk until well combine and emulsified
- Salt and pepper to taste
For the Salad
- kale
- cauliflower
- rainbow bell peppers
- sweet onion
- blueberries
- slivered almonds
- sunflower seeds
- salt and pepper
- Remove the thick stems of the kale and finely chop.
- Put kale in a large bowl and massage with your clean hands to break down the fibbers. About 30 seconds.
- Place cauliflower in a blender and pulse until the consistency of rice. Add the the kale.
- Finely chop the bell pepper and onion. Add to the bowl.
- Add blueberries, almonds, and sunflower seeds. Toss salad.
- Salt and pepper to taste.
- Toss with Lemon Honey Mustard when ready to serve.

The SuperFoods Salad looks and sounds absolutely delicious! I think I need to add this to our menu plan for next week!
